We do this to ensure that you receive the freshest product possible. Hops degrade quickly when exposed to heat, light and air, so we recommend that you store unused portions in your freezer. Hops provide bitterness, flavor and aroma to beer. The bitterness of hops is expressed by the percentage of weight of the hops that is Alpha Acid. The higher the Alpha Acid, the more bitter the hop. Hops with a low Alpha Acid percentage usually contribute more flavor and aroma to beer. The Alpha Acid content of a particular variety will fluxuate slightly from harvest to harvest and at your request, we will note the actual Alpha Acid content of any hops you order.
